One of two superb red wines served at Gauthier Soho from producers Nicole Michel & Jean-Yves Chaperon, from the Terrasses du Larzac an appelation in Languedoc in the village of St Andre de Sangonis, 30kms N.W Montpellier.

This fine cuvée is the outcome of rigorous plot selection, slow fermentation and maturation in oak barrels for 18 months. Notes of cherry, chocolate and blackcurrant. Very aromatic with scents of ripe fruits and flowers, full palate but with very smooth and velvety texture.

Savoury and rustic, at Gauthier Soho we pair with the classic Beef fillet or Roasted Venison with mushroom, black olive tapenade.

Jean-Yves Chaperon and his wife Nicole Michel created the 8 hectare vineyard in 2005.
The terroirs have large rolled pebbles stones, with high thermal amplitude and frequent north wind.

Those conditions provide wines with maturity, structure and freshness at the same time.
